Ragi/nachini Nul puttu/noodles.

 The nul puttu is one of my personal favorites for breakfast, served with steaming kadala curry or masala curry.  One would have it with steamed kerala bananas as well.

 In the quest to add more grains to the diet, wanted to do something with nachini or ragi/the finger millet.
 Tried this recipe out and came out quite fine.



Ingredients:
2 cups whole grain Ragi flour
1 cup water.
Salt to taste.
1 cup grated fresh coconut.

Method:

Roast the Ragi flour till it starts sending out a sweet aroma.  Make sure to keep stirring so as to not burn the fine flour.

 Boil water with a bit of salt.
Pour the boiling water onto the roasted flour.
Blend it in to make a smooth dough, while it is still fairly hot.
This helps keep the dough together.  Tried it with cold water and had a problem putting it through the sevai maker.
Make small balls of the dough and fit it into the sevai maker.  The one I used the model in the photo below.

In the steamer, place the plate fitting and make the sevai/noodles.  After one round, spread some fresh grated coconuts, then make another round.
This gives a very nice appearance as well as keeps the noodles fairly separate.
Serve with kadala curry (recipe soon) which is very similar to chole.
Or serve with steamed kerala bananas.
Or with Potato stew (recipe soon, hopefully!)

PS:  The noodles can be used to make spicy noodles in sauce, maggi style, minus the lead!  hahaha....  will try it soon and post!
