This is a variant of the usual potato patties. I have used raw bananas instead.
Ingredients:
4 raw bananas, steamed and peeled (we keep the peel aside, and use it as well!)
1/2 cup green peas, boiled
1/2 cup shredded carrot
1 cup chopped coriander (more or less as per taste)
1 tsp chopped ginger
10 small cloves garlic
1 green chillie (more if you like it spicy)
1/2 tsp black salt (may use rock salt or sea salt as well)
I didnt use turmeric, if using turmeric, roast it lightly before mixing.
Mash the bananas, chop the peels and keep aside. The skin of the bananas are rich in much needed fibre and nutrients. So we wont let that get away.
Lightly smash the chillies, ginger, garlic and salt.
Add this to the banana mash and mix well.
Add chopped coriander (I use a lot!), shredded carrot, chopped banana peels and green peas.
Knead them together, add salt if needed.
Roll into balls, flatten.
Dab them onto some sesame seeds so it doesnt stick to the pan.
You may use crushed peanuts or desiccated coconut as well.
Heat an iron tava.
When fairly hot, place the patties onto them
Let them roast for at least a minute, before turning over.
The sesame seeds will make sure they dont stick.
You can bake them as well, preheating the oven to 200 degree for half an hour and then baking the patties at the same temperature for 10 to 15 minutes.
Served with salads and green coriander chutney, it becomes a meal in itself.
Tastes yummy served with tomato basil chutney or ketchup, ragda or flax seed chutney as well.
I make these but I roll them in bread crumbs. Seasme seeds are a great idea! Will try this. What do you do with the peels?
