Bombay Chivda

Though it says Bombay, this recipe came from a friend in Delhi!
A healthy way to keep the kids off the packaged stuff.

Ingredients:
2 cups brown or red poha (rice flakes)
2 cups peanuts
1/2 cup cashew nuts
1/2 cup almonds
1 cup almonds
1 cups figs/raisins
1 tablespoon sesame seeds
2 cups of roasted gram
6 to 7 strands of curry leaves
2 tsp fennel seeds

1 tsp chilli powder or 2-3 whole dry red chillies.
1/2 tsp garam masala
1 tsp coriander powder
2 tsp dry mango powder(amchur)
Black salt to taste.

Procedure:
Roast the poha in small quantities to make it crisp and crunchy.

 Roast the ground nuts
roast the almonds and cashew nuts
 Keep the masalas ready.
and the rest of the ingredients.
I generally prefer raisins, but had to make do with figs today.
Roast the curry leaves on low flame till it becomes fragrant and dry.
Add in the roasted gram and fennel seeds.
Roast for a minute.
Add in the masalas, stirring constantly to avoid burning.
Add in the rest of the ingredients.  Add salt according to taste.
Switch off the flame and let it cool in the same vessel.
 Your delicious snack is ready!
Once cool, store in air tight containers.
Will stay for a week.
