Its Navratri and I am on a diet of raw fruits and seeds for these nine days. Most of the people are fasting, So I decided to use this wonderful collective energy to go on the fruitarian diet!
As experiments go, made this wonderful porridge of coconut and sabja seeds, sweetened with dates.
Ingredients:
1 fresh coconut, grated.
1/2 cup of dates, deseeded and cut thin.
2-3 cardamom seeds.
1 cup sabja seeds or chia seeds
Process:
Grind the coconut finely with a cup of water. add in the dates and add in 1 more cup of water. add in the cardamom seeds and blend in once more.
You may strain it at this step to have a kheer like consistency.
Since I wanted it to be more filling, I skipped this step.
Add in the chia or sabja seeds and let it soak for an hour or more, in the refrigerator if soaking for more than an hour.
Garnish with saffron or almond slivers.
(I garnished with cardamom since I didnt have saffron. Am off nuts for this time duration so no almonds as well.)
